Eight Treasure Rice is a traditional dish to celebrate Lunar New Year among Chinese people around the world. The great sweetness of the dish will bring you nothing but joy. In this version, we're adding a twist by transforming the looks of the dish and adding some new ingredients. The red bean sauce is simple to make but still very tasty. Surprise your family with this new way to make Ba Bao Fan!

step 1
In a large bowl, add the Glutinous Rice (2 cups) and water. The amount of water should double the amount of rice. Stir for a bit and soak for 1-3 hours.
step 2
Then add the rice to a rice cooker pot and fill it up with Water (1 1/4 cups). Turn on the rice cooker to regular cooking rice mode.
step 3
Meanwhile, in a saucepan over medium heat, add Unsalted Butter (1 Tbsp), Heavy Cream (1/2 cup), Red Bean Paste (1 cup), and Date Syrup (1 Tbsp). Occasionally stir for about 3 minutes or until everything is dissolved and combined. Keep the heat to low until ready to be served.
step 4
Once the rice is cooked, remove the pot from the rice cooker and stir in the Mixed Nuts and Seeds (1 cup) and Raisins (2 Tbsp).
step 5
Line the medium size bowl with heatproof cling film. Then add rice to a bowl, and firmly press down.
step 6
Set the serving plate on top of the bowl. Then flip. Remove the cling film and gently use your hands to press down the middle part to make space for the red bean sauce.
step 7
Pour the red bean sauce into the middle part of the rice.
step 8
Optionally sprinkle the Soy Milk Powder (to taste) on top. Serve warm.
