Step 1
In a medium mixing bowl, add Mozzarella Cheese (3/4 cup) , Eggs (2) , Almond Flour (1/2 cup) , Swerve Confectioners Sugar Replacement (1/4 cup) , Xanthan Gum (1/4 tsp) , Baking Soda (1/4 tsp) , Baking Powder (1/4 tsp) , and Vanilla Extract (1/2 tsp) . Whisk until well combined.
Step 2
Spray the waffle iron with cooking spray. Spoon the batter onto the waffle iron and smooth out using the back of the spoon.
Step 3
Cook until done according to waffle iron’s instructions, about 3 minutes.
Step 4
Transfer the ‘chaffle’ from the waffle iron to a serving plate and let it cool for 1 minute.
Step 5
Top with Whipped Cream (to taste) , Fresh Blackberries (to taste) , and shaved Dark Chocolate (to taste) or toppings of choice.
