In a medium mixing bowl, add Mozzarella Cheese (3/4 cup), Eggs (2), Almond Flour (1/2 cup), Swerve Confectioners Sugar Replacement (4 Tbsp), Xanthan Gum (as needed), Baking Soda (as needed), Baking Powder (as needed), and Vanilla Extract (as needed). Whisk until well combined.

Spray the waffle iron with cooking spray. Spoon the batter onto the waffle iron and smooth out using the back of the spoon.

Cook until done according to waffle iron’s instructions, about 3 minutes.
