Sweet Potato Black Bean Burgers with Aioli Dipping Sauce
This baby-friendly veggie burger is a nutritional powerhouse that your whole family will love. The burgers pack iron from the black beans along with vitamin C from the sweet potatoes to help your baby’s body absorb the iron. The dipping sauce helps moisten the burgers as dry foods can pose a choking hazard.

Salt
Cooking Instructions
1.
In a medium-sized mixing bowl, combine Mayonnaise (1/2 cup), Garlic (2 cloves), the juice from Lemon (1), and Ground Black Pepper (as needed). Whisk until combined.

Cover and refrigerate until serving. Add Salt (to taste) after serving the baby’s portion.

In a large mixing bowl, combine Black Beans (1 cup), Sweet Potatoes (1 cup), Quick Cooking Oats (1/2 cup), Egg (1), Onion Powder (as needed) and Ground Black Pepper (as needed). Stir until ingredients are evenly distributed.
4.
Using your hands, form burger mixture into balls about the size of a golf ball. Press to flatten into patties and place patties on wax paper until ready to fry.
5.
In a large frying pan, heat Avocado Oil (1/2 cup) over medium-high heat. When oil is shimmering, add the patties. Cook for 5 minutes on each side or until brown on the outside.
Author's Notes
You can freeze extra patties for future use.
To make the recipe vegan: for the egg in burgers substitute 1 Tbsp chia seed + 3 Tbsp water, stir to combine and let sit for 10 minutes before adding to ingredients. Use vegan mayo in the dipping sauce.
