Preheat the oven to 500 degrees F (260 degrees C). Place a baking try in the oven to heat up while you make the dough.
Sift the All-Purpose Flour (4 1/2 cup) and into a large bowl.
Add the Kosher Salt (1 teaspoon), Light Olive Oil (2 tablespoon), and warm Water (1 cup).
Mix everything together to form a rough dough.
Lightly flour a surface and knead dough for a minute to bring dough together. Divide into 8 pieces.
Working quickly, roll out each piece of dough as thinly as you can with a rolling pin.
Trim into rectangular pieces.
Prick each piece of dough with a fork, around 25 times.
Lightly brush each piece with Water (to taste) and sprinkle with Kosher Salt (to taste).
Remove the hot baking sheet from the oven and carefully place each piece of dough on to it. Place back in the oven and bake until the surface of the Matzoh is bubbly and golden, around 30 to 90 seconds.
Remove from the oven and flip. Bake for a further 15 to 30 seconds. Cool on a baking sheet. Serve and enjoy!
