Make the beet syrup by combining the
Granulated Sugar (1/2 cup)
Water (1 cup)
in a pot over medium-high heat. Stir until sugar is dissolved. Add
and let simmer for 10-15 minutes.
Combine 2 fl oz of beet syrup, juice of 2
Cointreau (2 fl oz)
White Mezcal (2 fl oz)
in a shaker. Fill with ice and shake for about 15 seconds.
Salt the rim of your glass and fill it with
Ice (as needed)
Pour margarita over ice and garnish with lime slices.
