Healthy Digestive Cookies

This recipe was inspired by the amazing Jamie Oliver's Instagram. My cookies are made with high-quality whole ingredients and they taste way more delicious than anything store-bought. Most importantly, they actually taste like digestive cookies.

3/4 cup Organic Red Fife Flour
1/2 cup Oats
1/2 teaspoon Baking Soda
1/3 cup Coconut Oil
1 tablespoon Nut Milk
1/2 cup Organic Chocolate Chips

STEP 1
Preheat oven to 350 degees F (175 degrees C).
STEP 2
Blitz the Oats (1/2 cup) in a blender or food processor to a finer texture.
STEP 3
Combine Organic Red Fife Flour (3/4 cup), Coconut Sugar (1/3 cup), Baking Soda (1/2 teaspoon), and Oats.
STEP 4
Melt Coconut Oil (1/3 cup) and add to dry ingredients. Add Nut Milk (1 tablespoon) and combine.
STEP 5
Roll cookie dough into one large ball and refrigerate for an hour or two. This will make forming the cookies much easier.
STEP 6
Grease a cookie sheet or line with parchment paper. Form the cookies into small balls and then flatten with a fork or your fingers.
STEP 7
Bake for 12 minutes.
STEP 8
When cookies are done baking, let cool completely on a cooling rack.
STEP 9
Place Organic Chocolate Chips (1/2 cup) in a saucepan on very low heat or use a double boiler to melt completely. Dip each cookie into chocolate and then refrigerate for an hour, then dip or drizzle cookies with chocolate!
STEP 10
Serve with chocolate or plain and enjoy!
