For the simple syrup, add the Granulated Sugar (1 cup) and Water (2 cup) to a small sauce pan and heat over medium heat, stirring until the sugar is dissolved.
Make a 2-inch lemon peel from the Lemon (1).
Add the Lemon Peel, Fresh Ginger (1 inch) and Dried Lavender Bulbs (2 tablespoon). Infuse for one hour or overnight in the fridge. Strain, discarding the solids.
Add the Moscato Wine (1 bottle) to a 3-quart pitcher. Pour in 2 cups of the Guava Juice (3 cup) and a half cup of the simple syrup. Stir and taste. Add in more guava juice and simple syrup as desired. Shake before serving.
Pour over a glass filled with Ice (to taste). Top with a splash of Carbonated Water (1 bottle). Garnish with Fresh Thyme (to taste), Blood Orange (to taste), Fresh Mint (to taste), Fresh Lavender (to taste), and/or Crystallized Ginger (to taste).
