An authentic vegan falafel recipe that is crispy on the outside but moist on the inside. It is the perfect meal prep recipe that is healthy, gluten-free, and vegan.

Preheat the oven to 390 degrees F (200 degrees C).
Drain and rinse the soaked Dried Chickpeas (1 cup).
Place soaked Chickpeas, Scallions (1 stalk), Fresh Cilantro (1/2 cup), Fresh Parsley (1/2 cup), Garlic (3 cloves), Olive Oil (1 Tbsp), Chickpea Flour (2 Tbsp), Baking Powder (1 tsp), juice from Lemon (1), Chili Powder (1/2 tsp), and Salt (to taste) in a high-speed blender or food processor. Pulse until a crumbly dough forms.
Scoop out 1 tablespoon at a time and form it into balls.
Bake it in the oven for 20-25 minutes, or until the edges of the falafels are slightly golden.
Serve it with some pita, salad greens, or alone as a snack - whatever you like!
Make sure to soak your dried chickpeas the night before! Using dried chickpeas gives your falafel a much creamier texture and helps them stay together.
Makes around 20 falafel balls.
