Make sure to soak your dried chickpeas the night before! Using dried chickpeas gives your falafel a much creamier texture and helps them stay together.

Makes around 20 falafel balls.

Preheat the oven to 390 degrees F (200 degrees C).

Drain and rinse the soaked Dried Chickpeas (1 cup).

Place soaked Chickpeas, Scallion (1 stalk), Fresh Cilantro (1/2 cup), Fresh Parsley (1/2 cup), Garlic (3 cloves), Olive Oil (1 Tbsp), Chickpea Flour (2 Tbsp), Baking Powder (1 tsp), juice from Lemon (1), Chili Powder (1/2 tsp), and Salt (to taste) in a high-speed blender or food processor. Pulse until a crumbly dough forms.
