Author's Notes

Make sure to soak your dried chickpeas the night before! Using dried chickpeas gives your falafel a much creamier texture and helps them stay together. Makes around 20 falafel balls.

Cooking Instructions

Step 1
Preheat the oven to 390 degrees F (200 degrees C).
Step 2
Drain and rinse the soaked Dried Chickpeas (1 cup) .
Step 3
Place soaked Chickpeas, Scallions (1 stalk) , Fresh Cilantro (1/2 cup) , Fresh Parsley (1/2 cup) , Garlic (3 cloves) , Olive Oil (1 Tbsp) , Chickpea Flour (2 Tbsp) , Baking Powder (1 tsp) , Lemon Juice (1 Tbsp) , Chili Powder (1/2 tsp) , and Salt (to taste) in a high-speed blender or food processor. Pulse until a crumbly dough forms.
Step 4
Scoop out 1 tablespoon at a time and form it into balls.
Step 5
Bake it in the oven for 20-25 minutes, or until the edges of the falafels are slightly golden.
Step 6
Serve it with some pita, salad greens, or alone as a snack - whatever you like!
