Zest the peel of one Sunkist Navel Orange (1). Juice the orange after the peel has been zested. This should give you enough zest and juice for the recipe.
In a large saucepan melt Butter (3 tablespoon) over low heat. Add in orange juice, zest, and Vanilla Extract (1/2 teaspoon).
Add the Mini Marshmallows (10 ounce) and Crispy Rice Cereal (6 cup). Stir until marshmallows are melted and cereal is coated.
Cover 9x13 inch pan with Nonstick Cooking Spray (as needed). Drop in the cereal mixture and spread evenly in the pan. Press down the top of the bars with a sheet of parchment paper to make them flat. Let cool for two hours.
Once the mixture cools you can use holiday cookie cutters to create festive shapes.
