Cooking Instructions
1.
Heat Olive Oil (4 Tbsp) in a cast-iron skillet over medium-high heat. Add Garlic (4 cloves) and cook, stirring frequently, for 3 minutes.

Add Zucchini (1), White Mushrooms (2 1/3 cups), Yellow Squash (1), Cherry Tomatoes (2 cups), Salt (as needed), and Ground Black Pepper (as needed) to the skillet and stir so veggies are well-coated.
3.
Preheat your oven’s broiler (optional).

Cook for 5 minutes, stirring occasionally until vegetables are tender. Sprinkle Shaved Parmesan Cheese (2/3 cup) over top of the vegetables.

Option 1: Cover skillet (don’t remove from heat) and allow the cheese to melt for 1-2 minutes. Option 2: Place cast iron skillet in the oven and broil for 1 minute, or until cheese is melted.
6.
Serve immediately!
