Bake Sweet Potatoes (9 cups) for one hour or more until soft and tender. Once cool remove skins.
Add potatoes to food processor with Dark Brown Sugar (1/4 cup), Unsalted Butter (1/4 cup), Bourbon (2 Tbsp), Salt (1/2 tsp), Fresh Ginger (1/2 tsp), Ground Allspice (1/8 tsp), Ground Nutmeg (1/8 tsp), Ground Cinnamon (1/2 tsp), Freshly Ground Black Pepper (1/8 tsp), zest and juice from Orange (1), Vanilla Extract (1 tsp), Large Eggs (2) and Pineapples (2/3 cup).
Puree the mixture until completely smooth. Transfer mixture to a buttered baking dish. Bake sweet potato mixture for 30 minutes at 350 degrees F (180 degrees C).
Then add Marshmallows (1 pckg) just enough to cover the top of the potatoes and bake/broil until then are nice and browned about 1-2 minutes.
