Step 1
Preheat oven to 350 degrees F (180 degrees C). Line a mini muffin tray with paper cups or grease really well.
Step 2
Combine Oat Bran (1 cup) , Almond Flour (3/4 cup) , Ground Flaxseed (1/4 cup) , Ground Cinnamon (1 tsp) and Baking Soda (1 tsp) into a large bowl.
Step 3
In a separate bowl, combine Eggs (2) , Pure Maple Syrup (1/3 cup) , Coconut Oil (2 Tbsp) , Almonds (1/2 cup) and Frozen Blueberries (1 cup) .
Step 4
Combine the dry and the wet ingredients together.
Step 5
Bake for 15-20 minutes or until a fork inserted comes out clean.
Step 6
Serve and enjoy!
