As elegant as they are delicious, poached pears are a splendid finish to dinners dressy or plain Here, the poaching syrup is red wine, honey and good cold-weather spices: cloves, cinnamon and star anise Look for pears that are ripe but still firm, and if you can, choose pears that have stems

Cooking Instructions

Step 1
Combine Dry Red Wine (1 cup) , Water (1 cup) , Granulated Sugar (3 Tbsp) , and Ground Allspice (1 tsp) together in a pot. Peel the Pears (4) but keep the stalk intact. Put the pears into the red wine and put on stove and heat to a boil.
Step 2
Once it starts boiling, turn the heat down to medium and simmer for 10 minutes. Turn the pear and simmer for another 10 minutes. Your pears should be tender by now, if not simmer for another 5 minutes.
Step 3
Take the pear out and arrange in a heat proof container, do not overlap them with each other. Keep boiling the red wine until it reaches a light syrup texture.
Step 4
Pour the red wine mixture back in with the pears. Once it cools down, put it in the fridge and leave it overnight. Flip the pears around to the side that has not marinated with red wine midway through.
Step 5
Serve with ice cream or sabayon as desired. Bon Appetite.
