These buttermilk beignets are so light and fluffy. You can make them the night before and serve them for breakfast.

Active Dry Yeast
Powdered Confectioners Sugar
Place the Milk (1/2 cup), Buttermilk (1/2 cup),Butter (1/4 cup), and Vanilla Extract (1 tsp) in bread machine.
Then add the Salt (1 tsp), Bread Flour (4 1/2 cups), Granulated Sugar (3 Tbsp), and Active Dry Yeast (1 Tbsp).
Turn on and let run the complete dough setting. Place the dough on a floured surface and roll out in a square and cut into rectangles with a pizza cutter.
Cover and let rest for about 30 minutes. You can place it in the refrigerator and save for later at this point.
Heat Peanut Oil (as needed) to 360 degrees F (180 degrees C). Place dough in the oil once hot and turn over again and again. Transfer to paper towels to drain.
Coat in Powdered Confectioners Sugar (2 cups). Serve hot and enjoy!
