Preheat the oven to 350 degrees F (180 degrees C). Line baking sheet with parchment or baking paper.
In a bowl, combine the dry ingredients: Unsweetened Coconut Flakes (1 cup), Unsweetened Shredded Coconut (1/2 cup), and Granulated Sugar (2 tablespoon). Give it a stir.
Seperate the white from the Egg (2). Whip up the egg white until it forms stiff peaks.
Gently incorporate the dry ingredients to it.
Lastly, add the Coconut Oil (1 tablespoon). Drop about a tablespoon of dough onto prepared baking tray.
Bake for about 10-15 minutes. Let the cookies cool down then serve. Enjoy!
