Preheat oven to 425 degrees F (220 degrees C), line one baking sheet with parchment and set a large, oiled, cast iron skillet aside.

To the large bowl add the juice of the Lemon (1/2), Extra-Virgin Olive Oil (3 Tbsp), Dried Thyme (1 Tbsp), Dried Oregano (1 Tbsp), Garlic (3 cloves), Fresh Mint (1 handful), Ground Cumin (1 dash), Crushed Red Pepper Flakes (1 dash), and stir till well combined.

Into a large bowl, add your Lightly Seasoned Jackfruit (2 pckg), and using a fork mash it up and give it a good stir. You want to ensure there are so large pieces or clumps and the Jackfruit is an even consistency.

Transfer mixture to a cast-iron skillet, flatten it out as much as possible. Pop into the oven and cook for around 40 minutes. At 20 minutes, pull it out and give it a little stir to evenly distribute the crispiness that will be developing.

Preheat oven to 400 degrees F (205 degrees C). Line another baking sheet with parchment paper.

To the same bowl you prepared your Jackfruit in, add Potatoes (4), juice of the Lemon (1), Olive Oil (1/3 cup), Salt (to taste), Fresh Oregano (2 Tbsp), and Simply Organic Garlic Powder (1 Tbsp).

Stir till well combined then transfer to the baking sheet. Cook for 45-55 minutes – depending on how thick or thin your potatoes are. You’ll know they’re ready when golden and super crispy and tender to touch. You can test with a knife.

Once your Jackfruit and Potatoes are crispy and fragrant remove from the oven and set it aside.

Pop your Pita Bread (4) of choice into the oven quickly to warm.

Assemble your Gyros by first adding Tzatziki (to taste) to the base of the pita, then some Jackfruit, Tomatoes (to taste), Pickled Onions (to taste), Lettuce (to taste), Crumbled Feta Cheese (to taste), fries, and a dusting of a fresh herb of your choice. Wrap it all up and enjoy hot with a fresh Greek salad!
