In a bowl whisk together Egg (60 gram), Almond Butter (12 gram), and Granulated Erythritol (25 gram).
Sift in Soy Flour (25 gram) and Protein Powder (10 gram). Stir in Mini Dark Chocolate Chips (as needed).
Drop tablespoons of dough onto a sheet of parchment paper.
In a separate bowl whisk the remaining Egg (60 gram) whites, Granulated Erythritol (25 gram), and Almond Butter (13 gram). Then add the Soy Flour (25 gram), Unsweetened Cocoa Powder (8 gram), and remaining Protein Powder (5 gram).
Drop tablespoons of dough right next to the white ones, making sure they slightly overlap on each others
Preheat your oven to 350 degrees F (180 degrees C).
Bake in the preheated oven at 350 degrees C (180 degrees C) for about 12-15 minutes.
Let the cookies cool down completely before lifting them. Store them in a jar or a ziplock bag.
