Author's Notes

I added some dark chocolate chips, but feel free to add some chopped nuts (pistachios and walnuts go divine with chocolate), orange zest for some extra flavoring, or replace the chocolate chips with some dry cranberries or raisins! Just keep in mind that whatever you add/replace will modify the nutritional content of the recipe.

In a bowl whisk together Eggs (4 Tbsp), Almond Butter (1/2 Tbsp), and Granulated Erythritol (2 Tbsp).

Sift in Soy Flour (1/3 cup) and Protein Powder (1 1/2 Tbsp). Stir in Mini Dark Chocolate Chips (as needed).

Drop tablespoons of dough onto a sheet of parchment paper.

In a separate bowl whisk the remaining Eggs (4 Tbsp) whites, Granulated Erythritol (2 Tbsp), and Almond Butter (1/2 Tbsp). Then add the Soy Flour (1/3 cup), Unsweetened Cocoa Powder (1 Tbsp), and remaining Protein Powder (1 Tbsp).

Preheat your oven to 350 degrees F (180 degrees C).
