Here is a super soft and flavorful dairy-free cake made with fresh cherries and dark chocolate.

Type 00 Flour
or Spelt Flour

or Soy Milk
Preheat your oven to 350 degrees F (180 degrees C).
In a bowl whisk up Eggs (2) and Brown Sugar (1/2 cup) until foamy and light.
Add the Vegetable Oil (3.5 oz) then incorporate the Cacao Powder (1/3 cup), Baking Powder (1 Tbsp), Salt (1 pinch) with half of the Type 00 Flour (3/4 cup), Almond Milk (2 oz), and whisk the ingredients together gently.
Add the remaining half of Type 00 Flour (3/4 cup) and Almond Milk (2 oz) and continue to whisk together. You should get a creamy batter.
Stir in 2/3 of the Cherries (3/4 cup).
Oil and dust with flour an 18-centimeter cake pan, pour in the batter, and decorate the top with the remaining Cherries (1/2 cup) and all of the Dark Chocolate Chips (1/4 cup).
Bake in a preheated oven at 350 degrees F (180 degrees C) for about 40 to 45 minutes.
Let the cake cool down completely before serving it.
