Cauliflower rice in general is a delicious thing. Whether you love or hate cauliflower, you will like cauliflower rice. It does not taste like cauliflower at all, in fact it is very bland just like white rice, so it is perfect for spicing up!

Cooking Instructions

Step 1
Remove the stems from the Cauliflower (1/2) and cut int into pieces.
Step 2
Wash thoroughly then lay out on a dish towel and gently pat dry.
Step 3
In two batches, add the cauliflower to the base of a food processor and process until a rice-like texture is achieved, about 10-12 seconds.
Step 4
Heat Coconut Oil (1 tablespoon) in a pan over medium heat. Add the Garlic (3 clove) and sauté until it is fragrant, about 30 seconds.
Step 5
Add the cauliflower and cook for 3-4 minutes, or until cauliflower is al-dente. Season with Salt and Pepper (to taste).
Step 6
Add Ground Turmeric (1/2 teaspoon), Sweet Peas (1 cup), and 2 tsp zest from the Lemon (1), stirring well. When the peas are heated through, remove from the heat.
Step 7
Serve warm.
