Mashed Chickpea Salad

This simple Mashed Chickpea Salad is an awesome alternative to tuna salad. It goes great in a sandwich, in a wrap, with veggies or crackers, or on its own.

(400 mL)

Chickpeas

•

1 Tbsp

Dijon Mustard

•

2 cloves

Garlic

•

4 Tbsp

Finely Chopped Red Onions

or 1 small shallot

4 Tbsp

Finely Chopped Scallions

•

1 handful

Dried Dill Weed , chopped

•

2 Tbsp

Vegan Mayonnaise

•

4 Tbsp

Chopped Pickles

•

Lemon , juiced

•

1 Tbsp

Olive Oil

•

1 tsp

Sea Salt

•

1/2 tsp

Ground Black Pepper

•

1 dash

Crushed Red Pepper Flakes

•

1 stalk

Celery , finely chopped

(optional)

3 Tbsp

Chopped Pickled Jalapeño Peppers

(optional)

Cooking Instructions

For the salad, simply add Chickpeas (1 can) , Dijon Mustard (1 Tbsp) , Garlic (2 cloves) , Red Onions (4 Tbsp) , Scallions (4 Tbsp) , Dried Dill Weed (1 handful) , Vegan Mayonnaise (2 Tbsp) , Pickles (4 Tbsp) , 1 tbsp of the juice of a Lemon (1) , Olive Oil (1 Tbsp) , Sea Salt (1 tsp) , Ground Black Pepper (1/2 tsp) , Crushed Red Pepper Flakes (1 dash) .

Continue to add Celery (1 stalk) , and Pickled Jalapeño Peppers (3 Tbsp) to a large mixing bowl. Combine using a pastry cutter or sharp tool that is easy for mashing.

Mash just till half the mixture is choppy, you don’t want to make hummus. Place into the fridge to set once you’ve reached a tuna salad-like consistency.
