Baked Ricotta with Lemon & Thyme

This baked ricotta recipe defines easy entertaining. It’s essentially a rich, creamy, indulgent, crowd-pleasing, elegant cheese spread that’s simply ricotta, eggs, and Parmigiano-Reggiano that’s beaten and baked until puffed.

16 ounce Ricotta Cheese
3 tablespoon minced Fresh Thyme
to taste Freshly Ground Black Pepper
1 teaspoon Kosher Salt
1/4 cup Extra-Virgin Olive Oil
to taste Crushed Red Pepper Flakes
to taste sliced Bread

STEP 1
Preheat oven to 425 degrees F (210 degrees C).
STEP 2
Mince or slice the Garlic (3 clove). Mince the Fresh Thyme (3 tablespoon). Zest the Lemon (1). Grate the Parmesan Cheese (1/4 cup).
STEP 3
Combine Ricotta Cheese (16 ounce), garlic, thyme, lemon zest, Freshly Ground Black Pepper (to taste), Kosher Salt (1 teaspoon), Extra-Virgin Olive Oil (1/4 cup), Parmesan, and Crushed Red Pepper Flakes (to taste). Mix until well combined.
STEP 4
Spoon into 1 large (about the size of a 9-inch oven-safe skillet) or several small gratin dishes.
STEP 5
Bake for 10 to 15 minutes or until bubbling and just slightly golden.
STEP 6
Let cool briefly. Serve with Bread (to taste).
