Author's Notes

Sparkling Coconut Water – If you do not have sparkling coconut water, use 1/2 coconut water and 1/2 unflavored or lemon sparkling water in place of the sparkling coconut water. If you do not like the coconut taste, omit the coconut water entirely and use sparkling water in its place.

Rum - You can use dark rum as I did, or you may use white rum. You may also use flavor rum but make sure the flavor mixes well with coconut, lemon, and raspberry. Do not use spiced rum! It will not taste good.

Place Fresh Raspberries (2 Tbsp) and Fresh Mint Leaves (4) into a glass and muddle for 15 seconds, or until they are to the desired consistency. I muddle until all of my raspberries are broken down into pulp or jam-like texture.

Fill your glass to the rim with Ice (to taste).

Add in Dark Rum (1 fl oz) and 1 Tbsp of juice from a Lemon (1/2) then stir.
