Into a mixing bowl, mix together the All-Purpose Flour (4 cup), Salt (1 teaspoon), Instant Dry Yeast (1 3/4 teaspoon), Olive Oil (1/4 cup), and Water (1 cup) until a nice and smooth dough forms.
Kneed the dough on a floured surface and set is aside in a small bowl for about 2 hours.
Kneed the dough again on a floured surface. Cut the dough into two small pieces, and roll each piece into flat rectangles.Allow the pieces to rise for about one hour.
Using a fork, make some prick marks, and brush the surface with olive oil. Top with the Dried Mixed Herbs (to taste), and bake at 180 degrees C (350 degrees F) for about 10 minutes.
