step 1
Combine cooked Sweet Glutinous Rice Flour (1 Tbsp) and Snowskin Flour (1/2 cup) in a large bowl and set aside.
step 2
In a pot, add Water (2.5 oz), Powdered Confectioners Sugar (1 Tbsp), and Crisco (1 Tbsp) together. Bring to boil until Crisco is melted, stir with a hand whisk.
step 3
Pour the hot liquid mixture into the flour and use a rubber spatula to stir the mixture into a soft dough and leave to cool. Then knead the dough to smooth . Add more cooked glutinous rice flour if the dough is still too sticky.
step 4
Divide the dough into 3 portions and add a little Food Coloring (to taste) - pink, green, yellow - to each piece of dough, knead smooth again.
step 5
Weigh the dough to about 14-15 gram and wrap in the Lotus Seed Paste (1/2 cup) filling and roll into ball shape again.
