Make filling up to 3 days in advance.

Store uneaten pies in the fridge in an airtight container. Before eating, reheat in a 400-degree F oven for 5-8 minutes until warmed through and crispy.

Cooking Instructions

Peel and finely dice the Green Apples (3).

Sprinkle the apples with Corn Starch (1 Tbsp) and toss until cornstarch is gone.

In a large skillet over medium heat, melt the Butter (4 Tbsp). Add the apples, Granulated Sugar (1/3 cup), Brown Sugar (1/3 cup), juice from Lemon (1), Simply Organic Cinnamon, Ground (1 tsp), and Salt (1/4 tsp). Stir to combine.

Add a couple of pinches of Ground Nutmeg (2 pinches). Stir to combine.

Cook down, stirring, until apples are soft and the filling is thickened, around 10 minutes. Remove from heat and let it cool completely.

Preheat the oven to 375 degrees F (190 degrees C).

Make cinnamon sugar sprinkle by combining Granulated Sugar (1 Tbsp), Simply Organic Cinnamon, Ground (1 Tbsp), and Salt (1 pinch) in another small bowl.

Lay the Puff Pastry (2 sheets) out on a piece of parchment paper and cut into 6 even pieces. Cut diagonal slits into half the pieces - these are the tops.

Brush the edges of the bottom pieces with Eggland's Best Classic Egg (1) and add 2-3 Tbsp of cooled apple filling to each.

Add the top piece and press along the sides with a fork to seal, then place your pies in the fridge for 10-15 minutes. This will help the pies to keep their nice, rounded shape.

Sprinkle with the cinnamon sugar. Bake for 20-25 minutes, until the tops are golden brown.

Let cool and serve.
