Ingredients

Sourdough Bread
•
4 cups
Cherry Tomatoes
•
1 cup
Ricotta Cheese
•
6 sprigs
Fresh Thyme
•
6 cloves
Garlic
•
to taste
Salt
•
to taste
Ground Black Pepper
•
as needed
Extra-Virgin Olive Oil

Cooking Instructions

1. 
Preheat oven to 375 degrees F (190 degrees C).
2. 
On a baking sheet, toss the Cherry Tomatoes (4 cups) , Garlic (6 cloves) , Fresh Thyme (6 sprigs) with Extra-Virgin Olive Oil (as needed) . Season with Salt (to taste) and  Ground Black Pepper (to taste) .
3. 
Place Sourdough Bread (5 slices) alongside the tomatoes, allowing to soak up the excess olive oil.
4. 
Roast until the tomatoes are beginning to burst and bread is toasted, approximately 30 minutes.
5. 
Spread Ricotta Cheese (1 cup) on toasted sourdough and top with tomatoes. Season with Salt (to taste) and Ground Black Pepper (to taste) , if needed. Serve and enjoy!
