In need of a delicious festive drink? Meet the Kiwi Bellini with Mint…crisp, fresh, and sparkling with fun. It’s a kiwi twist on the classic Bellini, and I used prosecco and mint for a crisp, fruity-fresh taste.

Place Kiwifruit (3), 1 Tbsp of Lemon Juice (1), and Granulated Sugar (1 tsp) in a blender or food processor and process until smooth.
Add 2 Tbsp of the puree to each glass and fill with cold Prosecco Wine (1 bottle).
Top with a slice of Kiwifruit (1) and a sprig of Fresh Mint (1 bunch). Serve immediately.
The puree will keep overnight in the refrigerator. Make sure to add the lemon juice.
