This bread is mildly sweet, so if you are looking for more of a dessert, you can increase the sugar to 1 cup. If you're not eating it straight out of the oven, I encourage you to throw a slice in the toasted and slather it with some butter. Delicious!

or Brown Sugar, Granulated Sugar
1 1/2 cups
Unsweetened Coconut Flakes

Cooking Instructions

Step 1
Preheat oven to 350 degrees F (180 degrees C).
Step 2
In a small pan, melt and brown the Unsalted Butter (6 tablespoon). Set aside.
Step 3
In a small bowl whisk together Large Egg (2), Coconut Milk (1 1/2 cup), and Vanilla Extract (1 teaspoon).
Step 4
In a large bowl, sift together the dry ingredients: All-Purpose Flour (1 1/2 cup), Whole Wheat Pastry Flour (1 cup), Baking Powder (2 teaspoon) and Salt (1/4 teaspoon).
Step 5
Mix Coconut Sugar (3/4 cup) and Unsweetened Coconut Flakes (1 1/2 cup) into dry ingredients.
Step 6
Add milk mixture into dry ingredients. Mix with wooden spoon until incorporated.
Step 7
Add melted butter, mix until just incorporated. Pour into 9 x 5 loaf tin. Sprinkle with 1 Tbsp Coconut Sugar. Bake for about 1 hour, until golden brown and toothpick comes out clean.
Step 8
Let cool for 5 minutes in pan. Remove from pan and cool on wire rack.
Step 9
Serve warm with butter. Enjoy!
