Preheat oven to 350 degrees F (180 degrees C).
In a small pan, melt and brown the
Unsalted Butter (1/3 cup)
. Set aside.
In a small bowl whisk together
Large Eggs (2)
GOYA® Coconut Milk (1 1/2 cups)
Vanilla Extract (1 tsp)
In a large bowl, sift together the dry ingredients:
All-Purpose Flour (1 1/2 cups)
Whole Wheat Pastry Flour (1 cup)
Baking Powder (1/2 Tbsp)
Salt (1/4 tsp)
Coconut Sugar (3/4 cup)
Unsweetened Coconut Flakes (1 1/2 cups)
into dry ingredients.
Add milk mixture into dry ingredients. Mix with wooden spoon until incorporated.
Add melted butter, mix until just incorporated. Pour into 9 x 5 loaf tin. Sprinkle with 1 Tbsp Coconut Sugar. Bake for about 1 hour, until golden brown and toothpick comes out clean.
Let cool for 5 minutes in pan. Remove from pan and cool on wire rack.
Serve warm with butter. Enjoy!
