Author's Notes

My secret tip: mix silken tofu and soy milk, at a 1 to 1 ratio, in a blender to make vegan cream. Silken tofu helps to the mashed potatoes thick and creamy!

Cooking Instructions

Step 1
In a large pot, bring water to a boil, and Salt (to taste) . Add Yukon Gold Potatoes (7 1/2 cups) to the pot, cover, and cook for 15 minutes, or until potatoes are tender.
Step 2
In a small saucepan, heat Vegan Butter (1/3 cup) and Garlic (3 cloves) , cook for 3 minutes, until fragrant, but not browning.
