Yields 2-4 servings.
If the zucchini dough is too wet, add flour to avoid soggy fritters (a tsp at a time). If the batter is too dry add plant milk, a tsp at a time.
If you want to keep the fritters warm while you cook other dishes, preheat your oven to 210 degrees F (100 degrees C) with a wire cooling rack on a baking tray inside. Once a zucchini fritter is cooked, place it onto the plate to keep warm until you’re ready to serve them all at once.
For Deep-frying Vegan Zucchini Fritters: In a deep pan or pot, heat 2-inches of oil to 350 degrees F (180 degrees C). Using a tablespoon, drop the dough into the hot oil. Fry until golden brown and crispy, turning occasionally. Drain thoroughly on a paper towel, or place onto a wire cooling rack.
