Take out a sturdy pot or dutch oven. Heat
Butter (3 Tbsp)
Olive Oil (2 Tbsp)
over medium-high heat.
Garlic (6 cloves)
, let them get soft and fragrant for a couple of minutes.
Shrimp (1 lb)
and cook until it becomes pink for another couple of minutes.
Diced Tomatoes (2 cans)
. Season the mixture generously with
Salt (2 pinches)
Crushed Red Pepper Flakes (2 pinches)
. Let it simmer and thicken for 20 minutes.
Vodka (1/3 cup)
Heavy Cream (2 cups)
Grated Parmesan Cheese (1/2 cup)
, stir thoroughly. Let it bubble and thicken some more for another 20 minutes.
In the meantime, get a pot of water on to boil. Once boiling, cook
Penne Pasta (4 1/3 cups)
until tender for about 8 minutes.
Drain the pasta and toss it in with the finished sauce. Serve with some salad and crusty bread for an incredible meal. Enjoy!
