Cooking Instructions

Step 1
Preheat the oven to 350 degrees F (180 degrees C).
Step 2
In a large bowl, combine Turkey (3 cups) , Yellow Onion (1) , Whole Kernel Corn (1 can) , Diced Green Chiles (1 can) , Shredded Cheddar Cheese (1 cup) , Sour Cream (1/2 cup) and Enchilada Sauce (1/2 can) .
Step 3
To a large baking dish, add Enchilada Sauce (1/2 can) .
Step 4
Add a few generous spoonfuls of the mixture to the middle of each 6-Inch Corn Tortillas (12) , around 1/3 cup. Wrap and place in a baking dish seam side down. Repeat with remaining tortillas and filling.
Step 5
Cover with remaining Enchilada Sauce (1 can) and sprinkle with remaining Shredded Cheddar Cheese (1 cup) .
Step 6
Bake for 20-25 minutes, or until the cheese is melted and bubbling.
Step 7
Serve warm topped with Fresh Cilantro (to taste) and sour cream.
