Leftover Turkey Enchiladas

Don't let any Thanksgiving turkey go to waste! This delicious, ultra flavorful enchiladas recipe is a new non-boring way to use any turkey leftovers. Use red or green enchilada sauce, corn, or flour tortillas and make these easy, yummy enchiladas in 30 minutes or less. Spice it up the day after Thanksgiving!

Whole Kernel Corn , drained

Small Diced Green Chiles

Shredded Cheddar Cheese , divided

Sour Cream

Enchilada Sauce , divided

or Green Enchilada Sauce

•

6-Inch Corn Tortillas

or Flour Tortillas

Fresh Cilantro

Cooking Instructions

Preheat the oven to 350 degrees F (180 degrees C).

In a large bowl, combine Turkey (3 cups) , Yellow Onion (1) , Whole Kernel Corn (1 can) , Diced Green Chiles (1 can) , Shredded Cheddar Cheese (1 cup) , Sour Cream (1/2 cup) and Enchilada Sauce (1/2 can) .

To a large baking dish, add Enchilada Sauce (1/2 can) .

Add a few generous spoonfuls of the mixture to the middle of each 6-Inch Corn Tortillas (12) , around 1/3 cup. Wrap and place in a baking dish seam side down. Repeat with remaining tortillas and filling.

Cover with remaining Enchilada Sauce (1 can) and sprinkle with remaining Shredded Cheddar Cheese (1 cup) .

Bake for 20-25 minutes, or until the cheese is melted and bubbling.

Serve warm topped with Fresh Cilantro (to taste) and sour cream.
