Prepare Farro (1 1/2 cups) per package directions. While farro is cooking, prepare the dressing.
Step 2
In a small bowl, whisk together the Champagne Vinegar (3 Tbsp) , Dijon Mustard (1/2 Tbsp) , Shallots (1 tsp) , Kosher Salt (3/4 tsp) , and Freshly Ground Black Pepper (1/2 tsp) . Continue to whisk while slowly adding the Olive Oil (1/4 cup) until the vinaigrette is well combined. Stir in the Chinese Chives (1 Tbsp) .
