Preheat an oven to 350 degrees F (180 degrees C).

Line a baking sheet with a non-stick silicone mat or parchment paper.

Add Old Fashioned Rolled Oats (3 cups), Pecan Meal (3/4 cup), Baking Powder (1 tsp), Ground Cinnamon (2 tsp), and Sea Salt (as needed) into a large bowl, stir to combine.

In separate bowl, combine Cinnamon Apple Sauce (1/2 cup), Coconut Sugar (4 Tbsp), Honey (4 Tbsp), Milk (1/2 cup), and Egg (1). Whisk everything until well combined.

Once you've grated the Honeycrisp Apple (1 cup), remove all liquid by squeezing with a clean paper towel Add grated apples to wet ingredients and stir again to combine.

Combine wet ingredients with dry ingredients, and gently mix together.

Use a 1/4 cup measuring cup to scoop the cookie mixture onto the baking sheet. I used the bottom side of measuring cup to gently flatten each cookie.

Bake cookies for 18-20 minutes or until cooked through and golden brown.

For a sweeter cookie, allow to cool and drizzle with homemade Caramel Sauce (1 cup).
