Step 1
Put
Butter (1 1/2 cups)
into a saucepan. Add
Caster Sugar (1/3 cup)
,
Brown Sugar (1/3 cup)
, and
Golden Syrup (2 1/2 Tbsp)
. Stir over low heat until the butter is melted and the mixture is smooth.
Step 2
Add
Salt (1 tsp)
and
Whipping Cream (3/4 cup)
, and gently stir for a minute or until the mixture is combined. Set the caramel.
Step 3
In the bowl of a mixer, add
Butter (1 cup)
and beat until pale and fluffy.
Step 4
Turn on the beaters again and slowly incorporate the caramel mixture to the butter. Add
Brandy (1 1/2 Tbsp)
and beat again.
Step 5
Remove the butter into some ramekins and cover with plastic wrap before cooling in the fridge to set.
Step 6
Serve chilled and enjoy!
