Put softened Butter (100 gram) into a saucepan. Add Caster Sugar (1/3 cup), Brown Sugar (1/3 cup) and Golden Syrup (2 1/2 tablespoon). Stir over a low heat until the butter is melted and the mixture is smooth.
Add Salt (1 teaspoon) and Whipping Cream (3/4 cup), gently stir for a minute or until mixture is combined. Set the caramel
In the bowl of a mixer, add Butter (250 gram) and beat until pale and fluffy.
Turn on the beaters again and slowly incorporate the caramel mixture to the butter. Add Brandy (1 1/2 tablespoon) and beat again.
Remove the butter into some ramekins and cover with plastic wrap before cooling in the fridge to set.
