Lamb and Caramelized Onion Penne is a delicious weekday main meal. Onion, carrot and freshly chopped rosemary are caramelized, then combined with lamb, tomatoes, and stock. Served with penne pasta, this fabulous dish is easy to prepare and guaranteed to be a hit.
, thinly sliced
Canned Diced Tomatoes
Ground Black Pepper
Penne Pasta (4 3/4 cups)
according to package directions. Once finished, drain and return to pot.
In a separate sauce pot, heat
Olive Oil (as needed)
over medium heat. Add
Yellow Onions (3)
Fresh Rosemary (2 Tbsp)
. Cook for about 10 minutes, or until the onions have browned.
Ground Lamb (1.1 lb)
and use a wooden spoon to break up the meat. Cook for 6 to 10 minutes, or until the meat has browned.
Chicken Stock (3/4 cup)
. Bring mixture to a boil and then reduce the heat a little. Allow the mixture to simmer for 3 to 4 minutes.
Canned Diced Tomatoes (1 3/4 cups)
Water (1/2 cup)
. Stir to combine and season with
Salt (to taste)
Ground Black Pepper (to taste)
. Allow sauce to simmer for about 10 minutes or until sauce thickens over low to medium heat.
Ricotta Cheese (1/3 cup)
. Once combined, stir meat sauce through pasta and serve.
