This is hands down my favorite honey walnut shrimp I’ve ever tasted. It surpasses all the ones I’ve tried at various Chinese restaurants and of course blows the panda express version out of the water.

Author's Notes

You can also buy candied walnuts and skip steps 1-3. Frozen shrimp is okay too. That’s what we normally use and thaw beforehand. Some recipes leave the tails on, but we took them off because they’re easier to eat that way.

Directions

HIDE IMAGES
Step 1
Stir the Water (1 cup) and Granulated Sugar (2/3 cup) in a small sauce pan and bring to a boil.
Step 2
Add Walnut (1/2 cup) and boil for 2 minutes to make the candied walnuts.
Step 3
Drain walnuts and dry on a cookie sheet.
Step 4
Whip the Egg (2) in a medium bowl until foamy.
Step 5
Stir in the Mochiko Sweet Rice Flour (1/3 cup) until pasty to make the batter.
Step 6
Dip Large Shrimp (1 pound) into the batter.
Step 7
Fry shrimp in Vegetable Oil (as needed) in a deep skillet over medium high heat until golden brown (about 5 mins).
Step 8
Drain on paper towels to get off the excess oil.
Step 9
In a medium serving bowl, stir the Mayonnaise (1/4 cup), Honey (2 tablespoon), and Sweetened Condensed Milk (1 tablespoon) to make a sauce.
Step 10
Toss the shrimp in the sauce until it’s evenly coated.
Step 11
Serve with candied walnuts sprinkled on top and enjoy!
