In a bowl combine Balsamic Vinegar (1/2 cup), Water (1/4 cup), and Vanilla Extract (2 Tbsp). Mix and set aside.

In a frying pan add Plums (10) and pour the vinegar mixture and Coconut Sugar (1/2 cup) over plums. Bring to a boil and then quickly reduce heat to low.

Simmer until liquid has reduced by half and plums start to get semi-soft (not mushy). If using Fresh Blueberries (to taste) be sure to add these a few seconds before plums get ready so they keep their texture and don't become mushy.
