Step 1
To make the blueberry syrup, in a small saucepan combine the Fresh Blueberries (1 cup) , Honey (2 Tbsp) , and Water (1/4 cup) and bring to a boil. Reduce heat to medium and mash the berries and simmer for 5 minutes.
Step 2
Run the mixture through fine sieve to remove pulp. Set aside to let cool. This will yield about 2/3 cup of blueberry syrup.
Step 3
In another small saucepan, bring Water (1 cup) to a boil. Remove from heat and stir in Granulated Sugar (1 cup) . This yields about 1-1/2 cups of simple syrup.
Step 4
In a large pitcher, combine Lemon Juice (1 cup) , simple syrup and blueberry syrup.
Step 5
Pour in Club Soda (3 cups) right before serving.
