In a small jug, add Dark Soy Sauce (1/3 cup), Honey (2 tablespoon), Garlic (2 clove), Fresh Ginger (1 tablespoon), Brown Sugar (1/2 cup), Lemon (1) and Bourbon (1/3 cup).
In a large dish, arrange Chicken Wing (1 kilogram) and pour marinade over until everything is coated. Cover with plastic wrap and place in fridge to marinate for at least 2 hours, or up to overnight.
Transfer chicken to a tray lined with non-stick baking paper. Reserve the marinade.
Bake the chicken at 180 degrees C (350 degrees F) for 20 minutes.
Baste chicken with reserved marinade.
Bake chicken for an additional 20 minutes, or until cooked through.
