You can never go wrong with a roast chicken recipe. This juicy, tender and delicious roast chicken is served with gravy and is anything but boring. An excellent chicken recipe idea for a family dinner or even a fancy dinner party!

Sea Salt Flakes
Ground Black Pepper
Preheat oven to 230 degrees C (450 degrees F) steam roast.
Pat dry the
Whole Chickens (3.5 lb)
with a paper towel. Season, inside and out with
Sea Salt Flakes (to taste)
Ground Black Pepper (to taste)
. Brush or spray with
Olive Oil (1 Tbsp)
Stuff cavity with
Lemon Zest (1/2)
Fresh Marjoram (2 sprigs)
Fresh Parsley (3 sprigs)
Garlic (3 cloves)
. Put chicken on a wire rack over a roasting tray.
Roast for 13 minutes then turn the oven down to 180 degrees C (350 degrees F) and roast for a further 70 minutes.
Remove from oven, cover with foil, and rest for 10 minutes.
Carve chicken and serve with
Gravy (to taste)
To test if cooked: Insert a fork into the chicken leg and hold up to allow some of the juice to run out, if the juice is clear the chicken is cooked.
