Step 1
Preheat oven to 230 degrees C (450 degrees F) steam roast.
Step 2
Pat dry the
Whole Chickens (3.5 lb)
with a paper towel. Season, inside and out with
Sea Salt Flakes (to taste)
and
Ground Black Pepper (to taste)
. Brush or spray with
Olive Oil (1 Tbsp)
.
Step 3
Stuff cavity with
Lemon Zest (1/2)
,
Fresh Marjoram (2 sprigs)
,
Fresh Parsley (3 sprigs)
, and
Garlic (3 cloves)
. Put chicken on a wire rack over a roasting tray.
Step 4
Roast for 13 minutes then turn the oven down to 180 degrees C (350 degrees F) and roast for a further 70 minutes.
Step 5
Remove from oven, cover with foil, and rest for 10 minutes.
Step 6
Carve chicken and serve with
Gravy (to taste)
