Rock Cakes are an old-fashioned sweet treat. Flour and butter are combined with milk, egg and dried fruit to create a thick, sticky batter. Lovingly baked, the Rock Cakes are golden and crisp on the outside, and soft and moist on the inside - give it a go!

Preheat oven to 200 degrees C (400 degrees F).
Into a mixing bowl, add and mix the Self-Rising Flour (2 cups), Ground Cinnamon (1/2 tsp), Caster Sugar (1/3 cup) and Butter (1/3 cup). Then add in the Sultanas (1/2 cup), and Dried Apricots (1/2 cup).
Into a jar, add and mix the Milk (3/4 cup), and Egg (1). Pour the mixture into the dry ingredients and combine everything well.
Take roughly tablespoons of the dough, and put them onto an oven tray lined with baking paper. Make sure to have a good spacing between them. Bake inside a preheated oven under 200 degrees C (400 degrees F) for about 15 minutes.
