In a saucepan, add Chicken Breast (2) and cover with water. Cover and cook on medium heat until it starts to simmer. Simmer for 10 minutes, or until chicken is cooked through.
Remove chicken to a mixing bowl. After chicken has cooled slightly, use a couple of forks to shred it into pieces.
Into the mixing bowl with the chicken, add Mayonnaise (1/2 cup), Sour Cream (2 tablespoon), Fresh Chives (2 tablespoon), Celery (2 stalk) and Walnut (2 tablespoon). Mix to combine.
For each sub, slice a Sub Roll (to taste) in half. Add Lettuce (to taste), chicken mixture and additional Walnut (to taste). Serve and enjoy!
