Add Chicken Stock (2 cups), Water (2 cups) into a large saucepan. Turn to high heat and once it's boiling, add Polenta (2 cups) and whisk it to make sure it's nice incorporated in the stock. Reduce the heat to low and stir this with a wooden spoon for about 10 minutes or until it's soft.
