Place the Fresh Cilantro (7 cups) Lime Juice (1/4 cup) , Olive Oil (1/4 cup) , Garlic (1 clove) , Dijon Mustard (1/2 Tbsp) , Granulated Sugar (1/2 Tbsp) , Ground Turmeric (1/2 tsp) , Salt (1/4 tsp) , and Freshly Ground Black Pepper (to taste) in a food processor or blender.
Step 2
Purée until smooth. Taste. Adjust dressing with more salt, pepper, lime, oil, etc.
Step 3
Place Canned Chickpeas (2 1/4 cups) in a large bowl. Add Red Onion (1) . Toss with dressing to taste.
Step 4
Taste, adjust with more salt if necessary.
