Place the Fresh Cilantro (4 ounce) Lime Juice (1/4 cup), Olive Oil (1/4 cup), Garlic (1 clove), Dijon Mustard (2 teaspoon), Granulated Sugar (2 teaspoon), Ground Turmeric (1/2 teaspoon), Salt (1/4 teaspoon), and Freshly Ground Black Pepper (to taste) in a food processor or blender.
Purée until smooth. Taste. Adjust dressing with more salt, pepper, lime, oil, etc.
Place Canned Chickpeas (1 pound) in a large bowl. Add Red Onion (1). Toss with dressing to taste.
Taste, adjust with more salt if necessary.
