Place Chickpeas (1 can) in a medium bowl and mash with a fork or potato masher, leaving some chunks of peas.
Add in the Celery (1/2 cup), Chopped Pecans (1/2 cup), Dried Cranberries (1/2 cup), Capers (1 tablespoon), Garlic Powder (1 teaspoon), and Vegan Mayo (2 tablespoon). Add in more mayo for a creamier salad. Season with Salt and Pepper (to taste).
Pile salad on Bread (to taste) and top with your favorite toppings.
