Mashed Chickpea Salad has got to be one of the easiest recipes. It's loaded with flavor and nutrition, and it’s super filling. I added cranberries, celery, pecans and capers for texture.

Cooking Instructions
1.
Place Chickpeas (1 can) in a medium bowl and mash with a fork or potato masher, leaving some chunks of peas.

Add in the Celery (1/2 cup), Chopped Pecans (1/2 cup), Dried Cranberries (1/2 cup), Capers (1 Tbsp), Simply Organic Garlic Powder (1 tsp), and Vegan Mayonnaise (2 Tbsp). Add in more mayo for a creamier salad. Season with Salt (to taste) and Ground Black Pepper (to taste).
3.
Pile salad on Bread (to taste) and top with your favorite toppings.
